Peanut Apple Crunch Balls
  • 1/3cup chunky peanut butter
  • 1/4 cup olive or avocado oil
  • 1/4 cup honey or maple syrup
  • 1cup rice or wheat flake cerealcoarsely crushed
  • 1cup bran flake cerealcoarsely crushed
  • 1/3cup dried applescut up
  • 2Tablespoons peanutschopped
  • 1/8teaspoon apple pie spice
  • 2ounces white baking chocolatechopped up
  • 1/4teaspoon shortening
  1. In a medium saucepan, combine peanut butter, oil, and honey or maple syrup. Cook and stir over medium heat until mixture begins to boil. Remove from heat.
  2. Stir in cereals, apples, peanuts, and apple pie spice until well mixed. Transfer to a small bowl; cover and chill 30 minutes (mixture will be a bit loose and crumbly).
  3. Using slightly wet hands, form mixture into 1-inch balls by gently pressing mixture together (will not roll into balls). It is important to keep your hands slightly wet for each ball formed.
  4. Place formed balls on a parchment or waxed paper-lined baking sheet until firm, about 15 minutes.
  5. In a small saucepan, combine white chocolate and shortening; cook and stir over low heat until melted.
  6. Drizzle balls with melted white chocolate. Cover and chill at least 15 minutes.
  7. Store, covered, in refrigerator.
